Try this mouth watering Butternut Squash with Lemongrass Soup!
This warm and comforting soup is packed with nutrients and has a delightful citrusy aroma.
Ingredients:
1 medium butternut squash (peeled, seeded, and diced - bake the seeds for a few minutes with some salt!
2 stalks fresh lemongrass (chopped into small pieces)
2 onions (chopped)
2 cloves garlic (minced)
2-inch piece fresh ginger (grated)
4 cups vegetable broth
1 can coconut milk
1 tablespoon olive oil
1 teaspoon turmeric powder
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions:
Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, and ginger. Sauté until fragrant.
Add the chopped lemongrass and butternut squash, stirring for a few minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 20 minutes until the squash is tender.
Stir in the coconut milk and turmeric powder. Let it simmer for another 5 minutes.
Blend the soup until smooth using an immersion blender or regular blender.
Season with salt and pepper to taste.
Garnish with fresh cilantro and serve hot. Enjoy!
